      凡物皆有先天,如人各有資稟。走過(guò)四季,每一種時(shí)蔬都能讓人感受到特定季節(jié)的溫度,而特定的季節(jié)又會(huì)喚醒你對(duì)每種時(shí)蔬的記憶。

      去餐館就餐,如果你點(diǎn)的蔬菜不“時(shí)令”,合格的服務(wù)生會(huì)悄悄地提醒你,這個(gè)菜不在季節(jié)。

      時(shí)蔬,乃時(shí)令蔬菜之簡(jiǎn)稱。江南人的吃食最講時(shí)令,什么季節(jié)吃什么菜,一點(diǎn)也不馬虎。

      時(shí)值春末淺夏,哪些時(shí)蔬可供選擇?莧菜、豇豆、黃瓜、天羅、苦瓜、蒲瓜、番茄之類的瓜蔬,沐著春陽(yáng),日見日長(zhǎng)。

      去菜場(chǎng)逛逛,見著這瓜想買,見到那菜也往籃里塞。可轉(zhuǎn)念一想,夏日氣溫高,新鮮瓜蔬隔夜就蔫,舉棋不定是常有的事。再說(shuō)了,一家三口,食量有限,最好現(xiàn)買現(xiàn)吃。不過(guò),倘若見到藕帶和嫩姜,千萬(wàn)不要猶豫,即便隔夜,也要買下。因?yàn)橐坏╁e(cuò)過(guò),就只能苦等來(lái)年。

      藕帶是蓮鞭的嫩芽。與藕相比,藕帶更嫩更脆,切開的剖面極像微型之藕——小指頭粗細(xì),雪白纖巧,不染一點(diǎn)雜色,猶如羊脂白玉雕刻而成的藝術(shù)品,精致玲瓏,晶瑩剔透。

      姜是老的辣,去腥解膩。但若當(dāng)作蔬菜,還是嫩的好——渾身鵝黃色,頂端有微微的紫紅,水分足,纖維少。一年當(dāng)中,只有端午前后的嫩姜,食之無(wú)絲無(wú)筋,還有脆生生的口感。

      孔夫子對(duì)吃食特別講究挑剔——魚餒而肉敗不食,色惡不食,臭惡不食,失飪不食,不時(shí)不食,割不正不食,不得其醬不食,沽酒市脯不食。但是,他也有自己的嗜好,那就是“不撤姜食”。

      至今,我們雖說(shuō)無(wú)法探知孔子愛吃的“姜食”有哪些內(nèi)容,但篤定是嫩姜派生的。在金華,永康五指巖生姜以“嫩”見長(zhǎng),素負(fù)盛名。簡(jiǎn)單一點(diǎn),切片切絲,用醬油或者陳醋腌漬一晚,便是下酒妙物。倘若熱炒,與雞塊、肉片、鱔絲等等相配,都是上上之選。

      秋天是收獲的季節(jié)。放眼望去,不僅有金黃色的稻浪,還有紫色落蘇()、青皮絲瓜、橙黃南瓜,就連湯溪的白辣椒也漸漸地由銀白轉(zhuǎn)成深黃,最后換上了一身大紅衣裳。

      歲月不居,四季有序。倘若不事農(nóng)桑,就體會(huì)不到萬(wàn)物生長(zhǎng)的微妙變化。就拿芋梗來(lái)說(shuō),如果不被人提起,是萬(wàn)萬(wàn)想不到,更不說(shuō)將它當(dāng)作秋日時(shí)蔬了。

      芋頭是暮春下種的,想吃芋梗,非到夏末初秋不可。

      梗,即芋葉抱合形成的假莖里的嫩芯部分,沒(méi)曬到太陽(yáng),光合作用也不明顯,因此芯是白色的。它纖維少,水分多,口感爽脆。

      金華人頗懂芋梗,大小餐館頻見“酒糟肉片溜芋梗”——五花肉片略煸,倒入芋梗片同炒,再加少許酒糟調(diào)色增味。這菜雖說(shuō)普通,但吃起來(lái)既有芬芳的草木清氣,又無(wú)絲毫纖維質(zhì)感。

      這些年,各種蔬菜的嫩芯、嫩莖吃得多了,比如婺城塔石的冬筍、磐安玉山的茭白、蘭溪諸葛的水芹、武義宣平的藕帶等等。以冬筍之鮮、茭白之軟、水芹之嫩、藕帶之脆,仍然可以看見植物本身的纖維,而湯溪芋梗,卻雪白粉嫩,如玉似脂,豐潤(rùn)肥腴,清鮮之極。

      如此褒獎(jiǎng)芋梗,對(duì)小白菜而言,興許有失公允。因?yàn)榍锒瑫r(shí)節(jié),特別是經(jīng)霜之后的小白菜,實(shí)乃“秋末晚菘”的杰出代表——葉兒是恣意的綠,莖桿是干脆的白,挺著身子,一株株立在泥土之上,青春、高挑、靚麗、脫俗、有氣質(zhì)。更難得的是,小白菜進(jìn)了廚房,清水洗洗,用手輕輕一折,就是一段一段的,點(diǎn)燃柴灶,剜一勺豬油,擱些許精鹽,爆炒,再加一點(diǎn)豆瓣醬,好糯好香!

      小白菜是杭州人的口語(yǔ),金華人叫它菘菜,厚大“高腳白”是湯溪招牌,也是浙江名特農(nóng)產(chǎn)品。在湯溪農(nóng)村,因?yàn)椤案吣_白”腿長(zhǎng)葉小,一般用來(lái)腌菜。時(shí)日一長(zhǎng),菘菜變腐,一款地方名饌“湯溪爛菘菜”香飄婺城。

      “魚吃跳,雞吃叫,蔬吃俏”,乃餐飲界行話。跳、叫、俏三者,皆有先天鮮活之意。特別是“俏”,意指難得、好看。像芋梗、菘菜之類,長(zhǎng)在野外,無(wú)不讓人感到一種小清新、小親近,立馬就能勾起人的食欲。

      蘭溪鄉(xiāng)賢李漁說(shuō),蔬食之美“曰清,曰潔,曰芳馥,曰松脆而已矣。不知其至美所在,能居肉食之上者,只在一字之鮮……”()

      花無(wú)百日紅,人無(wú)千日好。晚菘再美,也有吃厭的一天。好在歷經(jīng)一冬的孕育,俗稱“春八仙”的春筍、萵苣、蘆蒿、茭白、香椿、馬齒莧、薺菜、豌豆苗,清絕水靈,脫穎而出。

      “八仙”者“八鮮”也。吃了“春八仙”,便把整個(gè)春天嚼嚼咽下。但古人為何將春韭和菜薹[tái]排除在“八仙”之外?

      正月蔥,二月韭。早春時(shí)節(jié),一畦春韭,滿眼深綠。它沒(méi)有一絲雜葉、枯梢,一叢叢狀如書帶,韻如幽蘭。割一把,井水洗洗,細(xì)細(xì)切了,攤雞蛋、炒豆腐、包餃子……怎一個(gè)“香”字了得。只是,一幫吃貨意猶未盡,念念不忘香中透鮮的“韭炒螺肉”。

      春江水暖,螺螄正肥。買來(lái)螺螄,清水靜養(yǎng),滴幾滴菜油,使其吐盡泥沙,剪尾。煮一鍋開水,加生姜與料酒,將螺螄一燙(),剔出螺肉,去泥腸,晾干備炒。

      春韭與碧螺,其實(shí)是世間最尋常的東西,卻因了初春與初春的相遇,便成世間絕配——“鮮”味當(dāng)頭,宜小酌宜下飯,尤其拿來(lái)澆飯,其他菜肴就是多余的了。

      韭炒螺螄,從立春開吃,到清明前后就不太時(shí)興——韭菜漸老,螺螄也忙著孕育下一代。此時(shí),油菜、蒜苗、蘇州青等葉菜則急不可待,紛紛抽芯揚(yáng)花,隨時(shí)準(zhǔn)備“獻(xiàn)身”。

      薹,俗稱菜心,好多人不把它當(dāng)正經(jīng)菜看待。其實(shí),菜薹青春短暫,韶華易老,一不小心就會(huì)錯(cuò)失口福。

      菜薹我是喜歡的,還曾專門寫有《菜薹》。前兩天,讀安徽作家錢紅莉的《滋味閑筆》,才知她也是菜薹的忠實(shí)擁躉。她說(shuō):菜薹“可遇不可求”,“唯有老人用小竹籃提幾把來(lái),才算是霜雪浸透的好食材。去菜市,還要碰巧。早了,老人沒(méi)來(lái);遲了,五六把紫菜薹,一會(huì)兒便被老饕們搶光?!?/p>

      是啊,時(shí)蔬天生麗質(zhì),只要簡(jiǎn)單烹飪,盡量保持原汁原味,便讓人過(guò)舌難忘——內(nèi)心深處總有一種莫名的滿足,仿佛自己的生命也與周遭萬(wàn)物休戚與共。

      或許,這就是“不時(shí)不食”的飲食美學(xué)了。

      In Jiangnan, a region of plenty and in the south of the Yangtze River Delta, people favor vegetables in season. At a restaurant in Jiangnan, you would be kindly informed if something you happen to pick from the menu is not in season. As Jiangnan produces a great variety of vegetables all around the year, people in the region have long been in the habit of being fussy about what get served at the kitchen table or at a restaurant table.

      There are many vegetables in season in spring time such as lettuce, spring bamboo shoots and even some herb, and Chinese chive. In early spring time, Chinese chive and snail can be cooked together and nothing tastes better at this time of year. Such a gourmet window is small in spring. That is from early February to March. Days around Qingming Festival in early April, the dish tastes different if you ask gourmets.

      Toward the end of spring or at the beginning of summer, one can have a lot of choices of vegetables in season: edible amaranth, cowpea, cucumber, bitter gourd, tomato, just to name a few. These are in season and you dont have to buy a lot for fear that they may be out of supply tomorrow. You can rest assured that you can see the newest supply just in from farms tomorrow. But if you run into baby ginger or baby lotus root at a food market, never hesitate to buy. They are in season only for a very short time. If you decide not to buy them, the next time you see them will very probably be 365 days later. Baby ginger is a delicacy. You see it only in early May. Confucius is known to have a passion for ginger. He must have ginger at every meal. A safe guess is that the ginger he favored must have been baby ginger. In Jinhua, the central city in the heart of Zhejiang, chefs know a lot of ways to prepare ginger dishes. Baby ginger can be made into a cold dish to go with rice wine. It can be cooked with sliced eel and chicken or pork.

      One can easily recall vegetables in season when autumn arrives: eggplant, sponge cucumber, pumpkin, pepper. But many people have the slightest idea that taro stalk is available in late summer or early autumn. Gourmets love this rare delicacy. As the ingredient is not easily available on a food market, foodies usually pick a restaurant to enjoy tender vegetables such as winter bamboo shoot, wild rice stem, cress, baby lotus roots.
