“食品營養(yǎng)與配餐”課程思政教育的教學改革策略研究

摘要 在健康中國的戰(zhàn)略背景下，將課程思政教育的理念融于“食品營養(yǎng)與配餐”課程勢在必行。論述了建設(shè)團隊深入挖掘課程蘊含的思政元素并科學規(guī)劃，通過黨建引領(lǐng)“食品營養(yǎng)與配餐”課程主題實踐活動，采用靈活多樣的教學方法和信息化資源，從教學團隊建設(shè)，思政點融入設(shè)計，融合思政教育的課程標準和考核評價體系等方面開展課程思政教育的探索和實踐，將社會主義核心價值觀和課程思政教育的理念巧妙融入，從而實現(xiàn)在教學過程中知識技能傳授與價值引領(lǐng)同向同行，充分發(fā)揮課程的育人功能。

Research on Teaching Reform Strategies of Ideological and Political Education Based on “Food Nutrition and Catering” Course

Abstract Under the strategic background of healthy China， it is imperative to integrate the idea of ideological and political education into the course of “Food nutrition and Catering”. This paper discussed the construction team deeply excavated the ideological and political elements in the course and carried out scientific planning， by the themed practice activity of “Food Nutrition and Catering” under the leadership of the Party construction， flexible teaching methods and the information resources were adopted. It was proposed that the practice of curriculum ideological and political education includes the aspects of teaching team construction， the design of ideological and political points， the curriculum standard and assessment system of ideological and political education. The socialist core values as well as curriculum ideological and political education concepts were skillfully integrated， knowledge and skills were imparted in line with value guidance so as to realize the process of teaching which gave full play to the educational function of the curriculum.

習近平總書記在黨的十九大報告中指出，將“實施健康中國戰(zhàn)略”作為國家發(fā)展基本方略中的重要內(nèi)容，“人民健康是民族昌盛和國家富強的重要標志”?！笆称窢I養(yǎng)與配餐”課程是食品營養(yǎng)與檢測專業(yè)的核心課程，在促進合理膳食，增強我國人民體質(zhì)、預防慢性疾病，提高營養(yǎng)健康水平等方面起著重要作用，承載著培養(yǎng)食品營養(yǎng)高素質(zhì)技術(shù)技能型人才的重要任務。隨著人們生活水平的提高，高熱量、高脂肪食品攝入的不斷增加，“三高”、各類營養(yǎng)性疾病發(fā)病率逐年升高，當前我國正面臨著營養(yǎng)缺乏和營養(yǎng)過剩的雙重挑戰(zhàn)，因此，食品的均衡營養(yǎng)與合理配餐越來越受到人們的關(guān)注，普及營養(yǎng)與配餐知識在疾病預防、提高國民健康水平等方面起著重要作用[1]。2019年8月，中共中央辦公廳、國務院辦公廳印發(fā)了《關(guān)于深化新時代學校思想政治理論課改革創(chuàng)新的若干意見》，明確提出要整體推進高校課程思政建設(shè)，發(fā)揮所有課程育人功能。挖掘?qū)I(yè)課所蘊含的思政元素，在傳授專業(yè)課的同時進行思想政治教育是新時代高校培養(yǎng)牢固社會主義接班人的內(nèi)在必然要求[2]?！笆称窢I養(yǎng)與配餐”課程是高職食品營養(yǎng)與檢測專業(yè)的核心課程，在教學中探索了思政教育融入點和教學載體設(shè)計思政教育目標和課程內(nèi)容，通過中醫(yī)飲食、藥食同源、養(yǎng)生文化精髓和國民健康狀況等案例分析，使學生更深入領(lǐng)會和傳承中華飲食文化的博大精深，能夠以中國居民膳食指南指導居民合理營養(yǎng)與平衡膳食，對健康人群、慢病人群、特殊人群的營養(yǎng)配餐與設(shè)計，以黨建引領(lǐng)課程主題活動，實現(xiàn)實踐服務與育人相結(jié)合，并采用翻轉(zhuǎn)課堂教學、案例式教學、研討式教學以及社會實踐等，將社會主義核心價值觀和思政教育理念融入課程，從而將思政教育與專業(yè)教學有機結(jié)合，發(fā)揮課程的育人功能。
